Ruby is helmed by chef James Cornwall, who across 20 years has honed his skills in venues such as J Sheekey in London, Seafood Room in Hong Kong, as well as Melbourne’s own Iki Jime and Cumulus Inc.. Guests can expect a menu full of bold flavours and colours, as well as a curated wine list varying between Victorian & Australian wines, and a touch of European wines. Spins of classic cocktails are also available at Ruby Dining, such as the Swoon In June, Almond New Fashion & Cafe Negroni.
